Rice a la señoritos

Ingredients

For 4 people:

  • 400 grs. rice
  • 1 ñora
  • ½ kg. shrimp tails
  • 1 kg. artichokes
  • 2 ripe tomatoes
  • 2 squid (sepias)
  • ½ kg. rape
  • 12 clams
  • 1 litre fish stock
  • oil, salt and saffron

Preparation

  1. In a paella pan lightly sauté squid, rape, fish tales, tomato, diced ñora and artichokes.
  2. When lightly sautéed, add rice and saffron.
  3. Next add fish stock and water as needed (previously brought to boil), and boil 10 minutes over high heat.
  4. Reduce heat and add clams, and wait until rice is cooked.
