Fig ice cream

Ingredients

For 4 people:

  • 1 kg. dried figs
  • 1 litre Mistela
  • 750 ml. Milk
  • 250 ml. Cream
  • 8 egg-yolks

 

Preparation

  1. Soak figs with mistela. Drain and mash.
  2. Next infuse with flavour by mixing figs with milk and cream (heated previously without bringing to boil) and allow to sit for 8 hours to gain flavour.
  3. Following step (2) strain mix, add egg-yolks and place in freezer for 1 hour.
