Easter Cake


Ingredients for 4 people:

  • 900 grs. sugar
  • 100 grs. powdered sugar
  • 200 grs. baking powder
  • ¼ litre oil
  • 3 kgs. Cake flour
  • ¾ litre of water
  • 12 eggs
  • zest of two lemons



Spread the flour on a flat surface, forming two piles with a hole in the centre of each. Add the sugar in one of the holes and the yeast in the other. Spread the water between the two until the ingredients are mixed well. Combine the two piles and knead them. Next, add the eggs and lemon zest and continue to knead the dough. Gradually add the oil while kneading until the dough is fine and elastic.

Once the dough is ready, cover it and let it rise in a warm spot. Next, place it on a table covered with a white cloth. Separate the dough into portions and knead them with your knuckles, forming the monas.

Place each mona on a sheet of waxed paper and make a cross-shaped cut on top of each one.
