Cocas of corn with cod

For 4 people:

  • 1 cup of water
  • ½ cup of wheat flour
  • ½ cup of corn flour
  • Salt
  • 1 onion
  • 4 tomatoes
  • 2 cloves of garlic, Spanish thyme and bay leaf
  • 1 fillet frozen cod
  • 1 litre oil
  • 1 head of garlic
  • 1 bay leaf

Bring a pot to a boil with the water, a dash of oil and salt. Once it boils, add the flour and make the cakes.

Next, slice the tomatoes, onions, garlic, thyme and bay leaf thinly and sauté them.

Finally, heat the litre of oil on low heat with the head of garlic and one bay leaf. Once the oil is hot, add the cod slices (fry them lightly).

After that, remove the cod and set it aside.

Bake the cakes on a pan, adding the sautéed vegetables and topping them off with the codfish.
