Ingredients
Ingredients for 4 people:
- 900 grs. sugar
- 100 grs. powdered sugar
- 200 grs. baking powder
- ¼ litre oil
- 3 kgs. Cake flour
- ¾ litre of water
- 12 eggs
- zest of two lemons
Preparation
- Spread flour over smooth surface forming two piles with a small gap in the center of each. Add sugar to one gap and yeast to the other.
- Add water to each so that the ingredients dissolve. Mix both piles into one mixture. Add the eggs, lemon zest and incoporate into mixture. Slowly add in oil.
- Work mixture until in a fine and elastic form. Cover mixture in hot place and allow to sit until it rises. Next place mixture on a table covered with white cloth. Separate mixture into portions and knead (working the mixture with fists) into shape of "monas". Place each "mona" on waxed paper. Cut the shape of a cross on the top of each with a knife. For the EASTER "MONA" the preparation is the same, but they are moulded into a more stretched form. Baste with egg, sprinkle with sugar and place a raw egg in the center. Cut two strips and cross over top of egg. Place in the oven at gentle temperature for a half hour.
